Description

Berry Turnovers are flaky puff pastry pastries filled with a sweet and slightly tangy mixed berry filling. These easy homemade turnovers bake until golden and crisp, creating a bakery-style treat perfect for breakfast, brunch, or dessert.

  • 2 sheets puff pastry, thawed
  • 1 1/2 cups mixed berries (strawberries, blueberries, raspberries, blackberries)
  • 1/3 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 1 large egg
  • 1 tablespoon water
  • 2 tablespoons coarse sugar (optional)
  • 1/2 cup powdered sugar (for glaze)
  • 12 tablespoons milk (for glaze)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a small saucepan, combine the mixed berries, granulated sugar, cornstarch, lemon juice, and vanilla extract.
  3. Cook over medium heat, stirring frequently, until the berries release juices and the mixture thickens into a jam-like filling.
  4. Remove the filling from heat and allow it to cool completely.
  5. Lightly flour a work surface and unfold the thawed puff pastry sheets.
  6. Cut each sheet into four equal squares to create eight pastry squares.
  7. Place a spoonful of the cooled berry filling in the center of each square.
  8. Fold each square diagonally to form a triangle and press the edges together.
  9. Seal the edges by pressing with a fork to prevent the filling from leaking.
  10. Transfer the turnovers to the prepared baking sheet, leaving space between each pastry.
  11. Whisk together the egg and water to create an egg wash, then brush it over the tops of the turnovers.
  12. Sprinkle coarse sugar over the pastries and cut small slits in the tops to allow steam to escape.
  13. Bake for 18–22 minutes or until the pastries are puffed and golden brown.
  14. Allow the turnovers to cool slightly on a rack.
  15. Mix powdered sugar with milk to create a glaze and drizzle over the warm turnovers before serving.
