Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a small saucepan, combine the mixed berries, granulated sugar, cornstarch, lemon juice, and vanilla extract.
- Cook over medium heat, stirring frequently, until the berries release juices and the mixture thickens into a jam-like filling.
- Remove the filling from heat and allow it to cool completely.
- Lightly flour a work surface and unfold the thawed puff pastry sheets.
- Cut each sheet into four equal squares to create eight pastry squares.
- Place a spoonful of the cooled berry filling in the center of each square.
- Fold each square diagonally to form a triangle and press the edges together.
- Seal the edges by pressing with a fork to prevent the filling from leaking.
- Transfer the turnovers to the prepared baking sheet, leaving space between each pastry.
- Whisk together the egg and water to create an egg wash, then brush it over the tops of the turnovers.
- Sprinkle coarse sugar over the pastries and cut small slits in the tops to allow steam to escape.
- Bake for 18–22 minutes or until the pastries are puffed and golden brown.
- Allow the turnovers to cool slightly on a rack.
- Mix powdered sugar with milk to create a glaze and drizzle over the warm turnovers before serving.
