- 50–60 Biscoff cookies
- 1 ½ cups strong coffee or espresso
- 8 oz mascarpone cheese, chilled
- ½ cup Biscoff cookie butter, room temperature
- 2 tbsp granulated sugar
- 2 cups heavy whipping cream, chilled
- Optional: ½ tsp vanilla extract
- Optional: Pinch of salt
Instructions
- In a large bowl, whisk mascarpone cheese, Biscoff cookie butter, and sugar until smooth and creamy (be careful not to overmix).
- Add the chilled heavy cream and whisk until the mixture forms stiff peaks and is pipeable.
- Dip Biscoff cookies in the coffee for 1-2 seconds and arrange a layer in the bottom of your serving dish.
- Spread a layer of the Biscoff mascarpone cream over the cookies.
- Repeat with another layer of soaked Biscoff cookies and cream, reserving some cream for piping on top.
- Refrigerate the tiramisu for at least 4 hours or overnight until set.
- Decorate with crushed Biscoff cookies and a drizzle of warmed Biscoff cookie butter before serving.

- Ensure the mascarpone mixture is not overwhisked to avoid curdling.
