Ingredients
Scale
- 2 Bison New York Strip Loin Steaks (6 oz each)
- 4 tablespoons Butter
- 2 sprigs Fresh Rosemary
- 2 sprigs Fresh Thyme
- 3 cloves Garlic (minced)
- 2 tablespoons Olive Oil
- Salt (to taste)
- Pepper (to taste)
- 1 tablespoon Lemon Juice
Instructions
- Season the bison steaks generously with salt and pepper and let them rest at room temperature for 20 minutes.
- Heat olive oil in a skillet over medium-high heat and sear the steaks for 3-4 minutes per side, or until desired doneness is reached.
- Remove the steaks and set them aside to rest.
- In the same skillet, melt the butter over medium heat. Add the garlic and fresh herbs, and cook until the butter turns golden brown and fragrant (about 5 minutes).
- Pour the herbed brown butter over the rested steaks and drizzle with fresh lemon juice.
- Slice the steaks against the grain and serve immediately, topped with the herbed brown butter.
Notes
- For medium-rare, aim for an internal temperature of 130°F.
- Allow the steaks to rest for 5-10 minutes after cooking for maximum juiciness.
- Herb variations can include sage or oregano, depending on preference.
- For a dairy-free version, use plant-based butter.
