Description

A classic Bisquick Blackberry Cobbler with juicy blackberries and a golden, buttery biscuit topping. Easy to make with fresh or frozen berries, perfect for family desserts or gatherings.

Ingredients

Scale
  • 4 cups blackberries, fresh or frozen: juicy and tart flavor
  • 1 tablespoon cornstarch: thickens the filling
  • 2/3 cup sugar, divided: sweetens the fruit and topping
  • 1 teaspoon lemon juice: adds bright acidity
  • 2 tablespoons water (if using fresh berries): helps thicken the filling
  • 1 1/2 cups Bisquick mix: creates tender, fluffy biscuit topping
  • 1/2 cup milk: combines with Bisquick for the dough
  • 3 tablespoons butter, grated: adds richness and flakiness to topping

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a medium saucepan, combine 4 cups blackberries, 1 tablespoon cornstarch, 1/3 cup sugar, 1 teaspoon lemon juice, and 2 tablespoons water (if using fresh berries). Heat over medium heat, stirring frequently until thickened and bubbly.
  3. In a separate bowl, mix 1 1/2 cups Bisquick, 3 tablespoons grated butter, 1/3 cup sugar, and 1/2 cup milk until a thick, dough-like consistency forms.
  4. Pour the blackberry mixture into a baking dish or cast iron skillet and spread evenly.
  5. Drop spoonfuls of the Bisquick dough on top of the berries using a cookie scoop or large spoon, slightly pressing into the filling.
  6. Bake for 25 minutes until the filling is bubbly and the topping is golden brown. Optional: brush melted butter on the biscuit tops.
  7. Let cool for 10 minutes before serving. Serve warm with vanilla ice cream, whipped cream, or cream cheese.

Notes

  • Freeze butter for easier grating.
  • Do not overmix the Bisquick topping to maintain tenderness.
  • Leftovers can be stored in the fridge for up to 4 days or frozen for up to 3 months.
  • Use gluten-free baking mix for a gluten-free version.
  • Substitute brown sugar for white sugar for deeper flavor.
