Easy Black Bean Enchiladas made with hearty black beans, warm spices, corn tortillas, enchilada sauce, and melted cheese for a flavorful vegetarian dinner.

- 2 tablespoons olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 cans black beans, drained and rinsed
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1 tablespoon fresh lime juice
- 1/4 cup fresh cilantro, chopped
- 8 corn tortillas
- 2 cups red enchilada sauce
- 1 1/2 cups shredded Mexican cheese blend
Instructions
- Preheat the oven to 375°F and lightly grease a baking dish.
- Heat olive oil in a skillet over medium heat. Add the diced onion and cook for about 5 minutes, until softened.
- Add the minced garlic and cook for 1 minute, stirring until fragrant.
- Stir in the black beans, cumin, chili powder, and salt. Cook for 3 to 4 minutes, then lightly mash some of the beans for a creamy texture.
- Remove from heat and stir in lime juice and fresh cilantro.
- Warm the corn tortillas until pliable to prevent cracking.
- Spread a thin layer of enchilada sauce in the bottom of the baking dish.
- Fill each tortilla with the black bean mixture and a small amount of cheese, then roll tightly.
- Place the enchiladas seam-side down in the baking dish.
- Pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.
- Cover with foil and bake for 15 minutes.
- Remove the foil and bake for another 10 minutes, until the cheese is melted and bubbly.
- Let the Black Bean Enchiladas rest for 5 minutes before serving.
Notes
- Warm tortillas before rolling to keep them from tearing.
- Use homemade or high-quality store-bought enchilada sauce for the best flavor.
- Add bell peppers, spinach, zucchini, or jalapeños for extra flavor and texture.
