Instructions

  1. Rinse and drain the canned black beans (or use precooked homemade black beans). Set aside.
  2. In a medium pan over medium-high heat, sauté onions and bell peppers in olive oil for 2-3 minutes until tender.
  3. Add black beans, chopped spinach, taco seasoning, and salt. Cook for 1-2 minutes until combined. Remove from heat.
  4. Heat a large pan or griddle over medium-high heat with a thin layer of oil or cooking spray.
  5. Lay a tortilla flat, sprinkle cheese, add the black bean mixture, and top with more cheese. Fold the tortilla in half to enclose the filling.
  6. Cook each quesadilla 2-3 minutes per side, pressing lightly, until golden brown and cheese is melted. Repeat for all tortillas.
  7. Slice into wedges and serve hot with salsa, guacamole, or sour cream.
