  • 2 tbsp powdered sugar

Instructions

  1. In a saucepan over medium heat, combine blackberries, granulated sugar, and lemon juice. Cook for 5–7 minutes, stirring occasionally, until the berries soften and release their juices.
  2. Blend the mixture using a blender or immersion blender until smooth. Strain through a fine mesh sieve to remove seeds. Let the purée cool completely.
  3. In a large mixing bowl, whip the chilled heavy cream until soft peaks form. Add the vanilla extract and powdered sugar, then continue beating until stiff peaks form.
  4. Gently fold the cooled blackberry purée into the whipped cream using a spatula. Mix until fully combined while keeping the texture light and airy.
  5. Spoon the mousse into serving glasses or bowls. Refrigerate for at least 2 hours to set.
  6. Before serving, garnish with extra blackberries, mint leaves, or a swirl of whipped cream if desired.
