Ingredients
Scale
- 3 ripe bananas, mashed
- 2 cups all-purpose flour
- 1 cup fresh or frozen blueberries
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup milk or plain yogurt
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 tablespoon flour (for coating blueberries)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
- In a large bowl, mash the ripe bananas until mostly smooth.
- Add melted butter, granulated sugar, brown sugar, eggs, vanilla extract, and milk or yogurt. Mix until combined.
- In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
- Gradually add the dry ingredients to the wet ingredients and stir gently until just combined.
- Toss the blueberries with 1 tablespoon flour, then carefully fold them into the batter.
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 55 to 65 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
- Use very ripe bananas for the best sweetness and flavor.
- Do not overmix the batter to keep the bread soft and tender.
- If using frozen blueberries, add them directly from the freezer without thawing.
- Cover the loaf loosely with foil if the top browns too quickly.
- Store tightly wrapped at room temperature for up to 3 days or refrigerate for up to 1 week.
- Freeze individual slices or the whole loaf for up to 3 months.
