Description

- 2 1/2 cups peeled and sliced peaches (5–6 peaches)
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
- 1/4 teaspoon vanilla extract
- 1/2 cup granulated sugar
- 1/4 cup all-purpose flour
- 1/2 cup all-purpose flour (for topping)
- 1/2 cup old-fashioned oats
- 1/3 cup brown sugar
- 1/4 cup granulated sugar (for topping)
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 6 tablespoons cold butter, diced
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the blueberries, sliced peaches, lemon juice, lemon zest, vanilla extract, granulated sugar, and flour. Gently toss until the fruit is well coated.
- Let the fruit mixture sit while you prepare the crumble topping.
- In another large bowl, whisk together the flour, oats, brown sugar, granulated sugar, salt, and cinnamon.
- Add the cold, diced butter into the dry ingredients. Use your fingers to mix until the mixture forms clumps.
- Place the fruit mixture in a 2-quart baking dish or a large cast-iron skillet. Evenly sprinkle the crumble topping over the fruit.
- Place the baking dish on a large baking sheet and bake for 40 to 45 minutes, or until the topping is golden brown and the fruit is bubbling.
- Remove from the oven and let it cool slightly before serving. Enjoy warm with vanilla ice cream or whipped cream.
Notes
- If using frozen fruit, thaw and drain it before adding to the crumble.
- You can make the crumble topping ahead of time and store it in the fridge for up to 2 days.
- To make the crumble gluten-free, use a gluten-free flour blend and certified gluten-free oats.
- If you don’t have fresh peaches, canned peaches can be used, though fresh fruit provides the best flavor.
