- 2 1/4 tsp active dry yeast
- 1 cup warm milk
- 1/3 cup granulated sugar
- 2 large eggs
- 1/4 cup unsalted butter (softened)
- 1/2 tsp salt
- 1 tsp vanilla extract
- 2 tbsp cornstarch
- 1 cup heavy cream
- 1/2 cup milk (for custard)
- 4 oz semi-sweet chocolate
- 1/2 cup heavy cream (for glaze)
- Vegetable oil for frying
Instructions
- In a bowl, combine warm milk, sugar, and yeast. Let sit for 5–10 minutes until foamy.
- In a large bowl, mix flour and salt. Add yeast mixture, eggs, and butter, then mix into a soft dough.
- Knead the dough for 8–10 minutes until smooth and elastic. Let rise for 1–2 hours until doubled in size.
- Prepare the custard by heating milk and vanilla. Whisk egg yolks, sugar, and cornstarch, then slowly add warm milk. Cook until thickened and let cool.
- Roll out dough to 1/2 inch thickness and cut into rounds. Let rise again for 30–45 minutes.
- Heat oil to 350°F (175°C) and fry donuts until golden brown on both sides. Drain and cool.
- Fill donuts with custard using a piping bag.
- Melt chocolate with cream and dip the tops of donuts into the glaze.
- Allow glaze to set before serving.
Notes
- Ensure yeast is fresh for proper dough rise.
- Maintain oil temperature to avoid greasy donuts.
- Cool donuts completely before filling to prevent runny custard.
- Do not overfill to avoid bursting.
- Best served fresh for optimal texture and flavor.
