Ingredients
Scale
- 300 g pasta: the main base that creates a satisfying and comforting meal
- 500 g broccoli florets: adds nutrition, flavor, and a creamy texture when blended
- 3 cloves garlic: provides a warm aromatic flavor
- 3 tbsp extra virgin olive oil: adds richness and smoothness
- 1 lemon (juice and zest): brightens the dish and balances flavors
- 120 ml pasta cooking water: helps create a silky sauce consistency
- 1 tsp salt: enhances the overall flavor
- 1/2 tsp black pepper: adds gentle spice and depth
- 3 tbsp nutritional yeast or vegan cheese: adds a savory cheesy taste
- 1/2 tsp chili flakes: optional ingredient for extra heat
Instructions
- Wash the broccoli and cut it into small florets. Reserve a few pieces if you want extra texture in the finished dish.
- Bring a large pot of salted water to a boil and cook the pasta according to package directions until al dente. Reserve some pasta cooking water before draining.
- Cook the broccoli until tender by boiling it with the pasta during the final minutes of cooking or preparing it separately.
- Blend the cooked broccoli with garlic, olive oil, lemon juice, lemon zest, seasonings, and pasta water until a smooth creamy sauce forms.
- Combine the drained pasta with the broccoli sauce and mix well until every piece is evenly coated.
- Taste and adjust seasoning by adding more salt, pepper, lemon, or nutritional yeast if needed.
- Serve warm with optional toppings such as herbs, chili flakes, toasted nuts, or vegan cheese.
Notes
- Use short pasta shapes like penne, fusilli, or shells because they hold the creamy broccoli sauce well.
- Frozen broccoli can be used instead of fresh broccoli for convenience.
- Add extra pasta water gradually to achieve your preferred sauce consistency.
- For extra protein, add chickpeas, white beans, tofu, or plant-based protein.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat with a splash of water or olive oil to restore the creamy texture.
