Instructions

  1. Wash the broccoli and cut it into small florets. Reserve a few pieces if you want extra texture in the finished dish.
  2. Bring a large pot of salted water to a boil and cook the pasta according to package directions until al dente. Reserve some pasta cooking water before draining.
  3. Cook the broccoli until tender by boiling it with the pasta during the final minutes of cooking or preparing it separately.
  4. Blend the cooked broccoli with garlic, olive oil, lemon juice, lemon zest, seasonings, and pasta water until a smooth creamy sauce forms.
  5. Combine the drained pasta with the broccoli sauce and mix well until every piece is evenly coated.
  6. Taste and adjust seasoning by adding more salt, pepper, lemon, or nutritional yeast if needed.
  7. Serve warm with optional toppings such as herbs, chili flakes, toasted nuts, or vegan cheese.
