Description

Bunny Cinnamon Rolls are soft, fluffy, and sweet pastries shaped into adorable bunnies, filled with a rich cinnamon sugar mixture, and topped with a smooth vanilla glaze—perfect for Easter, brunch, or spring baking.

Ingredients

Scale
  • 3 1/2 cups all-purpose flour
  • 2 1/4 teaspoons active dry yeast
  • 1 cup warm milk
  • 1/3 cup granulated sugar
  • 1/3 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon salt
  • 1/2 cup brown sugar
  • 2 tablespoons ground cinnamon
  • 2 tablespoons melted butter (for filling)
  • 1 cup powdered sugar
  • 23 tablespoons milk (for glaze)
  • 1 teaspoon vanilla extract

Instructions

  1. Warm the milk until lukewarm and mix with yeast and a teaspoon of sugar. Let sit until foamy.
  2. In a large bowl, combine flour, sugar, and salt. Add yeast mixture, eggs, and butter, then mix into a soft dough.
  3. Knead the dough for 8-10 minutes until smooth and elastic.
  4. Place dough in a greased bowl, cover, and let rise until doubled in size.
  5. Roll the dough into a rectangle and spread melted butter over the surface.
  6. Sprinkle brown sugar and cinnamon evenly across the dough.
  7. Roll the dough tightly into a log and slice into pieces.
  8. Shape each piece into a bunny form by creating spirals and adding small pieces for ears.
  9. Place on a baking tray, cover, and let rise again until puffy.
  10. Bake in a preheated oven at 350°F (175°C) for 18-22 minutes until golden brown.
  11. Mix powdered sugar, milk, and vanilla to create glaze, then drizzle over warm rolls before serving.

Notes

  • Ensure milk is not too hot to avoid killing the yeast.
  • Do not over-flour the dough to keep rolls soft.
  • Let the dough rise in a warm, draft-free environment.
  • Shape bunnies loosely to allow for expansion during baking.
  • Best served warm for optimal texture and flavor.
  • Store leftovers in an airtight container for up to 2 days.
