Description

This Crunchy Cabbage and Ham Salad is a refreshing, protein-packed dish with crisp cabbage, juicy cucumbers, sweet corn, and savory ham tossed in a creamy lemon-mayo dressing. It’s a quick and healthy meal that requires no cooking, making it ideal for busy weeknights or light lunches.

  • 1 small head of cabbage (about 1 lb.), shredded
  • 4 small cucumbers, diced
  • 1 can (14 oz.) sweet corn, drained
  • 8 oz. ham, diced
  • ⅓ cup chopped scallions
  • ¾ cup mayonnaise
  • 1 tbsp. lemon juice
  • ½ tsp. salt
  • ¼ tsp. pepper

Instructions

  1. Prepare the cabbage: Remove any tough outer leaves and cut the cabbage into thin strips, similar to coleslaw. Rinse thoroughly and pat dry with a paper towel to remove excess moisture.
  2. Dice the vegetables and ham: Cut the cucumbers and ham into small, bite-sized cubes to ensure even distribution in the salad. Chop the scallions finely for a subtle onion flavor.
  3. Make the dressing: In a small bowl, whisk together the mayonnaise, lemon juice, salt, and pepper until smooth. Adjust seasoning to taste, adding more lemon juice for extra tanginess.
  4. Assemble the salad: In a large mixing bowl, combine the cabbage, cucumbers, ham, corn, and scallions. Pour the dressing over the mixture and toss everything together until well coated.
  5. Serve immediately: Enjoy the salad fresh, or refrigerate for 15–20 minutes before serving to allow the flavors to meld. Garnish with extra scallions or fresh parsley for added color and flavor.

Notes

  • For a lighter version, swap mayonnaise for Greek yogurt or a simple olive oil dressing.
