Description

This California Roll Cucumber Salad is a refreshing and light dish with all the flavors of a California roll. With creamy avocado, crunchy cucumber, savory crab, and a delicious Asian-inspired dressing, it’s the perfect quick meal or side dish.


Ingredients

  • 2 tbsp mayonnaise
  • 1 tbsp soy sauce
  • 1/2 tsp sesame oil
  • 1 tsp rice wine vinegar
  • 1/4 tsp sugar
  • 1 English cucumber, diced (about 23 cups)
  • 1 ripe avocado, diced
  • 1/4 cup red onion, finely diced
  • 4 oz. imitation crab meat (or real crab meat)
  • Sesame seeds or furikake seasoning (optional)

Instructions

  1. In a small bowl, whisk together the mayonnaise, soy sauce, sesame oil, rice wine vinegar, and sugar. Set aside.
  2. Dice the cucumber, avocado, and red onion, and chop the crab meat into small pieces.
  3. In a medium-sized mixing bowl, combine the cucumber, avocado, red onion, and crab meat. Gently toss to combine.
  4. Pour the dressing over the salad mixture and toss to coat evenly.
  5. Sprinkle sesame seeds or furikake seasoning on top for garnish. Serve immediately or chill for 10-15 minutes before serving.

Notes

  • The salad is best enjoyed immediately. If storing, keep the avocado and dressing separate until serving to maintain freshness.
  • For a spicier version, add sriracha to the dressing or drizzle it over the top of the salad.
  • For a more authentic taste, use real crab meat instead of imitation crab.
