Description

Caprese Pasta Salad is a vibrant, fresh dish that combines tender pasta, juicy tomatoes, creamy mozzarella, and fragrant basil. Tossed in a delicious pesto and white balsamic dressing, this salad is perfect for summer gatherings and can be made in just minutes.


Ingredients

  • 8 ounces cavatappi noodles (or other short pasta)
  • 2 tablespoons olive oil
  • 4 tablespoons white balsamic vinegar
  • 1/2 cup basil pesto
  • 1 pint cherry tomatoes, quartered
  • 1/2 cup fresh basil, chopped
  • 8 ounces mozzarella pearls
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente.
  2. Drain and rinse the pasta under cold water. Transfer to a large mixing bowl.
  3. Drizzle the pasta with olive oil, white balsamic vinegar, and pesto. Toss to combine.
  4. Add the cherry tomatoes, chopped basil, and mozzarella pearls. Stir gently to combine.
  5. Season with salt and pepper to taste. Optionally, add red pepper flakes or grated Parmesan for extra flavor.
  6. Serve immediately or refrigerate for a few hours before serving for better flavor.
