Description

Caramel Monkey Bread is a gooey, buttery pull-apart bread made with biscuit dough, brown sugar, cinnamon, and rich homemade caramel sauce. Perfect for breakfast, brunch, holidays, or dessert, this easy recipe delivers soft layers coated in sweet caramel flavor with every bite.

Ingredients

Scale
  • 2 cans (16.3 oz / 462 g each) refrigerated biscuit dough, cut into bite-sized pieces
  • 1 cup (220 g) packed brown sugar, divided
  • 1 teaspoon (2.5 g) ground cinnamon
  • 1/2 cup (113 g) unsalted butter
  • 1 teaspoon (5 ml) vanilla extract
  • 1/2 teaspoon (3 g) salt
  • 1 cup (120 g) chopped pecans (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and generously grease a bundt pan.
  2. Cut the biscuit dough into small bite-sized pieces.
  3. In a large bowl, combine 1/2 cup (110 g) brown sugar and the cinnamon, then toss the dough pieces until evenly coated.
  4. Sprinkle some pecans into the bottom of the prepared pan if using.
  5. Layer the coated dough pieces into the pan, alternating with additional pecans.
  6. In a saucepan over medium heat, melt the butter and stir in the remaining 1/2 cup (110 g) brown sugar and salt until smooth.
  7. Remove from heat and stir in the vanilla extract.
  8. Pour the caramel mixture evenly over the dough layers.
  9. Tap the pan gently on the counter to help distribute the caramel.
  10. Bake for 35–45 minutes or until golden brown and cooked through in the center.
  11. Allow the monkey bread to cool in the pan for 10 minutes.
  12. Carefully invert onto a serving platter and serve warm.

Notes

  • Grease the bundt pan thoroughly to prevent sticking.
  • Allow the bread to rest for 10 minutes before inverting.
  • Cover loosely with foil if the top browns too quickly.
  • Store leftovers in an airtight container for up to 3 days.
  • Reheat individual portions in the microwave for the best texture.
  • Walnuts can be substituted for pecans.
  • The recipe can be assembled the night before and refrigerated before baking.
