Description

Ingredients

  • 1 teaspoon white wine vinegar (5 ml)
  • 1 tablespoon lemon juice (15 ml)
  • 1 teaspoon lemon zest (optional, 2 g)
  • 1/4 teaspoon kosher salt (1.5 g)
  • 1/4 teaspoon freshly ground black pepper (0.5 g)
  • Lemon wedges, for serving (optional, 1 wedge per serving)

Instructions

  1. Wash and dry the carrots thoroughly. Trim the ends and peel off the outer skin.
  2. Using a vegetable peeler, continue peeling the carrots lengthwise to create long carrot ribbons. Rotate the carrots as needed and discard the tough core when necessary.
  3. In a small bowl or mason jar, combine the olive oil, white wine vinegar, lemon juice, lemon zest, kosher salt, and black pepper.
  4. Whisk or shake the dressing until fully emulsified. Taste and adjust seasoning if desired.
  5. Place the carrot ribbons in a serving bowl and drizzle with the desired amount of lemon vinaigrette.
  6. Toss gently to coat the carrot ribbons evenly.
  7. Let the salad rest for 5 minutes to slightly soften the carrots while maintaining their crunch.
  8. Serve immediately with optional lemon wedges and additional seasoning if desired.
