- 6 ounces fresh cherries
- 4 ounces cream cheese
- ⅓ cup powdered sugar
- ½ teaspoon vanilla extract
- 1 egg (for egg wash)
- 1 sheet frozen puff pastry (thawed)
Instructions
- Rinse and pat dry cherries, then pit and cut them in half.
- In a medium bowl, combine cream cheese, powdered sugar, and vanilla extract. Stir until smooth.
- Whisk together egg, cold water, and a pinch of salt to make the egg wash.
- Roll out puff pastry dough into a 10.5-inch square and cut it into 9 squares.
- Place a tablespoon of the cream cheese mixture in the center of each square.
- Top with 3–4 cherry halves on each square.
- Brush a small amount of egg wash on one corner of each pastry square, then fold it over diagonally and seal the edges.
- Freeze the pastries for at least 30 minutes before baking.
- Preheat the oven to 400°F (210°C) and bake for 20–25 minutes until golden brown.
- Let the pastries cool slightly on a wire rack, then dust with powdered sugar before serving.
Notes
- Work with chilled puff pastry to prevent it from becoming too soft.
- Feel free to use different fruits, like raspberries or apricots, in place of cherries.
- Make ahead: Freeze the pastries before baking, and bake them directly from the freezer.
- Store leftovers in an airtight container in the refrigerator for up to 3–4 days.
