  • 1/2 cup unsalted butter (softened)
  • 1/2 cup packed brown sugar
  • 1/3 cup molasses
  • 1 large egg
  • 1/2 cup whole milk
  • For the frosting:
  • 4 oz cream cheese (softened)
  • 1/2 cup unsalted butter (softened)
  • 2 cups powdered sugar
  • 2 tbsp molasses
  • For garnish (optional): festive sprinkles or candies

Instructions

  1. In a small bowl, whisk together flour, baking powder, baking soda, ginger, allspice, cinnamon, and nutmeg. Set aside.
  2. In a large bowl, beat butter and brown sugar together until creamy. Add egg, molasses, and milk, and beat until combined.
  3. Gradually add the dry ingredient mixture to the wet mixture, mixing until smooth and fluffy.
  4. Fill the muffin tin with batter, filling each cup about two-thirds full.
  5. Bake at 350°F for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Cool completely before frosting.
  6. To make the frosting, beat the softened cream cheese and butter until creamy. Add powdered sugar and molasses and mix until smooth.
  7. Frost cooled cupcakes and garnish with festive sprinkles or candies, if desired.

Notes

  • Do not overmix the batter to prevent dense cupcakes.
  • Use a toothpick to check for doneness; it should come out clean when inserted into the center.
