Description

This Christmas salmon is a festive, healthy, and flavorful main course baked in a sweet pomegranate glaze and garnished with fresh rosemary and pomegranate seeds. Ready in just 18 minutes, it’s an easy and elegant holiday dish perfect for Christmas dinners or special occasions.


Ingredients

  • 1/4 cup pomegranate molasses: for a sweet-tart glaze
  • 1/4 cup maple syrup: adds natural sweetness
  • 1 tablespoon butter: adds richness to the sauce
  • 1 tablespoon vanilla extract: provides warm, floral undertones
  • 1 teaspoon dried rosemary: adds earthy, festive aroma
  • 1/4 teaspoon sea salt: enhances overall flavor
  • 1/4 teaspoon black pepper: adds a subtle kick
  • 6 salmon fillets: the main protein, tender and flaky
  • Pomegranate seeds: for garnish and crunch
  • Fresh rosemary sprigs: for garnish and aroma

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a medium pan over medium-high heat, combine pomegranate molasses, maple syrup, butter, vanilla extract, dried rosemary, salt, and pepper.
  3. Bring the mixture to a boil and continue boiling for 4 minutes, stirring occasionally.
  4. Remove the pan from heat and allow the glaze to cool until thickened to a molasses-like consistency.
  5. Place the salmon fillets on the prepared baking sheet and spoon the glaze generously over each fillet.
  6. Bake in the preheated oven for 8–9 minutes, or until the salmon reaches an internal temperature of 140°F (60°C) and flakes easily with a fork.
  7. Remove from oven and spoon any sauce that ran off back over the top of the salmon.
  8. Garnish with pomegranate seeds and fresh rosemary sprigs before serving.

Notes

  • You can use steelhead trout as a salmon alternative.
  • Make the glaze a day ahead to save prep time on the holiday.
  • For a spicier version, add a pinch of chili flakes to the glaze.
  • Use parchment paper to prevent sticking and ease cleanup.
  • Store leftovers in the fridge for up to 3 days in an airtight container.
