Description

Cilantro Lime Chicken is a juicy, flavor-packed chicken dish marinated with fresh lime juice, garlic, cilantro, and warm spices. It is easy to prepare, versatile, and perfect for weeknight dinners, meal prep, or grilling season.

Ingredients

Scale
  • 1.5 lb boneless skinless chicken breasts or thighs: the main protein that absorbs the marinade and stays juicy
  • 1/4 cup fresh lime juice: tenderizes the chicken and adds bright citrus flavor
  • 1 tbsp lime zest: enhances the lime aroma and intensifies flavor
  • 1/4 cup olive oil: keeps the chicken moist and carries the flavors
  • 1/3 cup fresh cilantro, finely chopped: adds fresh, herbaceous notes
  • 3 cloves garlic, minced: provides savory depth
  • 2 tbsp honey: balances acidity and helps caramelization
  • 1 tsp ground cumin: adds warmth and earthiness
  • 1 tsp chili powder: gives mild heat and color
  • 1 tsp salt: enhances overall flavor
  • 1/2 tsp black pepper: adds subtle spice

Instructions

  1. In a medium bowl, whisk together lime juice, lime zest, olive oil, garlic, honey, cumin, chili powder, salt, and black pepper until fully combined.
  2. Place the chicken in a shallow dish or zip-top bag and pour the marinade over it, ensuring all pieces are well coated.
  3. Cover and marinate in the refrigerator for at least 30 minutes, or up to 8 hours for deeper flavor.
  4. Remove the chicken from the refrigerator 15 minutes before cooking to bring it to room temperature.
  5. Heat a grill, grill pan, or skillet over medium-high heat and lightly oil the surface.
  6. Cook the chicken for 5–7 minutes per side, depending on thickness, until the internal temperature reaches 165°F.
  7. Transfer the chicken to a plate and let it rest for 5 minutes before serving.
  8. Garnish with extra fresh cilantro and a squeeze of lime juice if desired.

Notes

  • Do not marinate longer than 8 hours, as the lime juice can affect the texture of the chicken.
  • Chicken thighs can be used instead of breasts for a juicier result.
  • This recipe works well for grilling, pan-searing, or baking.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 4 days.
