Instructions
- Preheat the oven to 350°F (175°C). Grease and flour an 8-inch square baking pan.
- Peel, core, and dice the apples into small pieces. Set aside.
- In a large bowl, whisk together flour, sugar, baking powder, and cinnamon.
- In another bowl, whisk together eggs, vanilla extract, and melted butter. Add this mixture to the dry ingredients and stir until combined.
- Fold in the diced apples.
- For the topping, combine brown sugar, cinnamon, butter, and flour until crumbly.
- Pour the batter into the prepared pan, then sprinkle the crumb topping evenly over the top.
- Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool before serving.
Notes
- To prevent apples from sinking, coat them lightly with flour before mixing them into the batter.
- For extra crunch, increase the crumb topping slightly and ensure it’s golden brown when baked.
