Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour an 8-inch square baking pan.
  2. Peel, core, and dice the apples into small pieces. Set aside.
  3. In a large bowl, whisk together flour, sugar, baking powder, and cinnamon.
  4. In another bowl, whisk together eggs, vanilla extract, and melted butter. Add this mixture to the dry ingredients and stir until combined.
  5. Fold in the diced apples.
  6. For the topping, combine brown sugar, cinnamon, butter, and flour until crumbly.
  7. Pour the batter into the prepared pan, then sprinkle the crumb topping evenly over the top.
  8. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool before serving.
