  • Pinch of salt
  • 1/3 cup white chocolate chips
  • 2 1/2 to 3 cups Cinnamon Roll Instant Oatmeal Packets (about 8 packets)

Instructions

  1. Line your counter with foil or a Silpat mat for cookie placement.
  2. In a medium saucepan, combine butter, granulated sugar, brown sugar, and almond milk. Heat over medium-high until the mixture comes to a full boil.
  3. Once boiling, stir continuously for one minute to ensure proper thickening.
  4. Remove from heat and stir in vanilla extract, cinnamon, nutmeg, salt, white chocolate chips, and instant oatmeal packets. Add oatmeal gradually until the mixture reaches a semi-firm consistency.
  5. Using a cookie scoop, drop spoonfuls of the mixture onto your prepared surface. Allow cookies to set and cool.
  6. Once set, transfer to an airtight container for storage at room temperature.
