Instructions

  1. Preheat the oven and prepare the pan: Set the oven to 315°F (157°C). Grease a 10-cup Bundt pan thoroughly with nonstick spray or butter and flour to prevent sticking.
  2. Cream the butter and sugar: In a large mixing bowl, beat the butter on high speed for 2 minutes until smooth. Gradually add the sugar and salt, then continue beating for 7 more minutes until the mixture becomes light and fluffy.
  3. Incorporate the eggs: Add the eggs one at a time, mixing well after each addition. Scrape down the sides of the bowl to ensure even mixing.
  4. Add the flour: Reduce the mixer speed to low and slowly add the sifted cake flour in two batches. Mix until just combined, being careful not to overmix.
  5. Mix in the 7UP and lemon extract: Pour in the 7UP soda and lemon extract, scraping down the sides of the bowl to ensure all ingredients are well incorporated. Mix until just combined.
  6. Bake the cake: Pour the batter into the prepared Bundt pan and bake for 75–85 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool in the pan for 10 minutes before inverting onto a wire rack to cool completely.
  7. Make the glaze: In a small bowl, whisk together the powdered sugar, 7UP soda, and lemon extract until smooth and pourable.
