Instructions
- Preheat the oven and prepare the pan: Set the oven to 315°F (157°C). Grease a 10-cup Bundt pan thoroughly with nonstick spray or butter and flour to prevent sticking.
- Cream the butter and sugar: In a large mixing bowl, beat the butter on high speed for 2 minutes until smooth. Gradually add the sugar and salt, then continue beating for 7 more minutes until the mixture becomes light and fluffy.
- Incorporate the eggs: Add the eggs one at a time, mixing well after each addition. Scrape down the sides of the bowl to ensure even mixing.
- Add the flour: Reduce the mixer speed to low and slowly add the sifted cake flour in two batches. Mix until just combined, being careful not to overmix.
- Mix in the 7UP and lemon extract: Pour in the 7UP soda and lemon extract, scraping down the sides of the bowl to ensure all ingredients are well incorporated. Mix until just combined.
- Bake the cake: Pour the batter into the prepared Bundt pan and bake for 75–85 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool in the pan for 10 minutes before inverting onto a wire rack to cool completely.
- Make the glaze: In a small bowl, whisk together the powdered sugar, 7UP soda, and lemon extract until smooth and pourable.
- Glaze and serve: Once the cake is completely cool, drizzle the glaze over the top and let it set before slicing and serving.
