- 300g Treacle
- 225g Unsalted butter
- 250g Whole milk
- 300g All-purpose flour (sifted)
- 180g Granulated sugar
- 1 tsp Baking soda
- 1 tsp Baking powder
- 1 tsp Salt
- 2 Tbsp Ground ginger
- 1 tsp Ground cinnamon
- ½ tsp Mixed spice or pumpkin pie spice
- ½ tsp Ground nutmeg
- ½ tsp Ground cardamom
- 2 large Eggs
Instructions
- Preheat the oven to 300°F (150°C). Grease and line a loaf pan with butter and parchment paper.
- In a medium saucepan, melt together the treacle and butter over medium heat. Stir occasionally and remove from heat once melted.
- Add the cold milk to the mixture and let it cool for 10 minutes to avoid scrambling the eggs.
- In a large bowl, sift together the flour, sugar, baking soda, baking powder, salt, and spices.
- Whisk the eggs into the cooled treacle mixture until smooth.
- Add the wet ingredients to the dry ingredients and whisk until the batter is smooth and lump-free.
- Pour the batter into the prepared loaf pan and spread it evenly.
- Bake for 1 hour and 20 minutes, or until a skewer inserted into the center comes out clean.
- Let the loaf cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing and serving.
Notes
- Ensure baking powder and baking soda are fresh to get the best rise.
- Do not overmix the batter to maintain a light, moist texture.
- If you don’t have treacle, golden syrup or molasses can be used as substitutes, though treacle gives the best flavor and texture.
- The loaf can be made a day or two ahead to allow the flavors to develop.
- For added flavor, serve the loaf with butter or lightly toasted slices.
