Description

Crab Salad Sushi is a light, low-carb appetizer made with imitation crab, a tangy mayonnaise-lemon dressing, and fresh cucumber slices. It’s a quick and healthy dish that combines creamy textures with a refreshing crunch.

Ingredients

  • Imitation Crab: 1 cup, shredded
  • Mayonnaise: 1/2 cup
  • Lemon Juice: 1 tbsp
  • Cucumber: 1, sliced into rounds
  • Soy Sauce: 1 tbsp
  • Sesame Seeds: 1 tbsp

Instructions

  1. Shred the imitation crab into small pieces.
  2. In a bowl, mix the mayonnaise and lemon juice until smooth.
  3. Add the shredded imitation crab to the mayo mixture and toss until well-coated.
  4. Slice the cucumber into rounds, about 1/4 inch thick.
  5. Top each cucumber slice with a spoonful of the crab salad mixture.
  6. Sprinkle sesame seeds on top for garnish.
  7. Serve immediately and enjoy!

Notes

  • For a richer flavor, you can substitute the mayonnaise with avocado mayonnaise.
  • Store the crab salad mixture separately from the cucumber slices to avoid sogginess.
  • For a spicier version, drizzle with sriracha or spicy mayo on top.
  • If you want to use real crab, king or Dungeness crab are great alternatives to imitation crab.
