Ingredients
Scale
- 3/4 Cup water
- 1/2 Cup granulated sugar
- 12 ounces fresh cranberries
- 1 small shallot, finely chopped
- 1/2 Cup packed brown sugar
- 1 teaspoon ground cinnamon
- 1/4 Cup apple cider vinegar
- 2 tart apples, diced
- 1/2 Cup golden raisins
Instructions
- In a medium saucepan, combine water and granulated sugar. Bring to a boil over medium heat, stirring occasionally to dissolve the sugar.
- Once boiling, stir in the cranberries, shallot, brown sugar, cinnamon, and apple cider vinegar. Continue cooking for about 5 minutes, until the cranberries begin to pop.
- Add the diced apples and golden raisins. Lower the heat to simmer and cook for another 10-15 minutes, until the apples are tender and the sauce has thickened.
- Remove from heat and let it cool. Serve warm or chill in the refrigerator before serving.
Notes
- Store any leftover chutney in an airtight container in the fridge for up to 10 days.
- The chutney can be frozen for up to 2 months. Thaw overnight in the fridge or reheat on the stove.
- If you prefer a sweeter chutney, feel free to add more sugar or honey to taste.
- For a spicier version, consider adding a pinch of chili flakes or ground cloves.
