  • 1 sheet puff pastry, preferably all-butter, thawed (260 grams)
  • 1/2 cup jarred cranberry compote or jam (160 grams)
  • 6 ounces brie cheese, cubed (190 grams)
  • 24 pecan halves
  • 1 teaspoon minced fresh rosemary, plus sprigs for garnish

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 24-cup mini muffin pan.
  2. Roll the puff pastry into an 8×12-inch rectangle. Cut the pastry into 24 2×2-inch squares and press them into the mini muffin cups. Dock the bottoms with a fork.
  3. In a saucepan, combine cranberries, orange juice, water, and brown sugar. Bring to a boil, reduce heat, and simmer for 15-20 minutes until thickened into a jam-like consistency. Stir in orange zest and let cool.
  4. Spoon 1 teaspoon of cranberry compote into each puff pastry cup. Add one cube of brie and a pecan half.
  5. Bake for 17-20 minutes, until the pastry is golden and the filling is bubbly.
  6. Garnish with rosemary sprigs and serve warm or at room temperature.

Notes

  • Keep puff pastry cold for flaky layers. If it warms up, refrigerate it for 10 minutes before using.
  • Use homemade or store-bought cranberry compote, but avoid canned or jellied cranberry sauce to prevent it from melting out of the tartlets.
