  • 1/2 cup fresh orange juice (from 12 oranges)
  • 1/4 cup brown sugar
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a baking dish.
  2. Heat a large skillet over medium-high heat, adding olive oil. Season the chicken with salt and pepper, then sear on both sides until golden brown, about 4-5 minutes per side.
  3. In a saucepan, combine fresh cranberries, orange juice, brown sugar, garlic, and fresh thyme. Cook over medium heat, stirring occasionally, until the cranberries burst and the sauce thickens, about 10-12 minutes.
  4. Transfer the seared chicken to the baking dish and pour the cranberry orange glaze over the chicken.
  5. Bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  6. Remove from the oven and allow the chicken to rest for a few minutes. Garnish with fresh thyme or orange zest before serving.
