Description

This Cream Cheese Cranberry Loaf is an indulgent and festive treat, combining the rich, creamy goodness of cream cheese with the tart freshness of cranberries. A perfect dessert or snack for the holidays or any time of year, this loaf is moist, flavorful, and easy to prepare.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 2 eggs
  • 8 oz cream cheese, softened
  • 1 cup fresh or frozen cranberries

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan with butter or non-stick cooking spray.
  2. In a medium bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.
  3. In a separate large bowl, beat the unsalted butter and eggs until light and fluffy, about 2-3 minutes.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined. Avoid overmixing.
  5. In a small bowl, mix the cream cheese with 2 tablespoons of sugar and fold in the cranberries until well combined.
  6. Spread half of the dough into the prepared loaf pan, then top with the cream cheese-cranberry mixture. Carefully spread the remaining dough over the top.
  7. Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the loaf cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely.

Notes

  • For extra moistness, try using whole wheat flour or oat flour in place of some of the all-purpose flour.
  • To prevent over-browning, cover the loaf with aluminum foil in the final 10-15 minutes of baking.
  • Allow the loaf to cool before slicing to ensure cleaner slices.
