Description

This Creamy Dill Cucumber Onion Salad is a refreshing and tangy summer side dish featuring crisp cucumbers, red onions, and a creamy dill dressing made with sour cream and mayonnaise. It’s easy to prepare, perfect for barbecues, potlucks, or family meals, and can be made ahead for better flavor.

Ingredients

Scale
  • 2 large cucumbers: crisp, refreshing base
  • 1 medium red onion: adds sharpness and color
  • 2 tablespoons fresh dill: provides a fresh, aromatic flavor
  • 1/2 cup sour cream: adds tangy creaminess
  • 1/4 cup mayonnaise: balances tang with smooth texture
  • 2 tablespoons white vinegar: enhances freshness
  • 1 teaspoon sugar: balances the tanginess
  • 1/2 teaspoon garlic powder: for a subtle savory note
  • 1/2 teaspoon salt: brings out all flavors
  • 1/4 teaspoon black pepper: adds mild heat

Instructions

  1. Thinly slice cucumbers and red onion using a mandoline or sharp knife.
  2. (Optional) Sprinkle cucumbers with salt and let sit for 20 minutes to draw out excess water, then pat dry.
  3. In a large bowl, whisk together sour cream, mayonnaise, white vinegar, sugar, garlic powder, salt, and black pepper until smooth.
  4. Stir in freshly chopped dill to the dressing mixture.
  5. Add the cucumbers and onions to the bowl and toss gently to coat evenly.
  6. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  7. Before serving, give the salad a final stir and garnish with additional dill if desired.

Notes

  • For a lighter version, replace sour cream with Greek yogurt.
  • Use English or Persian cucumbers for fewer seeds and thinner skin.
  • Adjust the sweetness by increasing or reducing sugar as per taste.
  • Prepare the dressing in advance and combine with cucumbers before serving to prevent excess wateriness.
