Ingredients
Scale
For the Chicken:
- 2 large boneless, skinless chicken breasts
- 2 teaspoons Italian seasoning
- Salt and black pepper, to taste
- 2 tablespoons butter, melted
- 1–2 tablespoons olive oil
For the Ranch Sauce:
- 10.5 oz can cream of chicken soup
- 1 ½ cups milk
- 1 cup sour cream (room temperature)
- ½ teaspoon onion powder
- 1 oz packet Ranch seasoning mix (about 3 tablespoons)
Instructions
- Prepare the Chicken: Slice each chicken breast into 2 to 3 thinner pieces. Lightly pound them with a meat mallet if needed to ensure even thickness. Season both sides with Italian seasoning, salt, and pepper. Brush one side with melted butter.
- Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Place the chicken in the pan, buttered side down, and cook for about 4 to 5 minutes per side until golden brown. Once cooked through, remove from the skillet and set aside.
- Make the Sauce: In the same skillet over medium heat, add the cream of chicken soup, milk, sour cream, onion powder, and ranch seasoning mix. Stir well to combine, making sure there are no lumps. Let the sauce gently bubble for about 5 minutes so the flavors can blend.
- Combine and Simmer: Return the seared chicken to the skillet, placing it in the sauce. Spoon the sauce over the top of each piece to coat evenly. Cover the skillet partially and let everything simmer for about 10 minutes, allowing the chicken to absorb the flavors.
- Serve and Enjoy: Plate the creamy ranch chicken with your favorite sides, such as mashed potatoes or roasted vegetables. Spoon extra sauce over the top before serving.
Notes
- For extra richness, add a sprinkle of shredded cheddar cheese or crispy crumbled bacon before serving.
- To thin the sauce, add a splash of chicken broth or extra milk if needed.
- Leftovers can be stored in an airtight container in the fridge for up to 3 days or frozen for up to 3 months. Reheat gently on the stovetop.
- For a lighter version, use Greek yogurt instead of sour cream and a low-fat cream of chicken soup.
