  • 1/4 teaspoon black pepper

Instructions

  1. Place the sweet potato cubes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil over medium-high heat.
  2. Reduce heat and simmer for 15-20 minutes, or until the sweet potatoes are fork-tender. Drain well and return to the pot.
  3. While the sweet potatoes cook, melt the butter in a small saucepan over medium heat. Continue cooking, swirling occasionally, until the butter turns golden brown and smells nutty, about 3-4 minutes. Remove from heat.
  4. Add the brown butter, heavy cream, milk, nutmeg, salt, and black pepper to the sweet potatoes. Mash until smooth and creamy, adjusting seasoning as needed.
  5. Transfer the mash to a serving bowl and garnish with chopped chives, if desired. Serve warm.
