Description

This Creamy Tuscan Gnocchi is a quick, one-pan dinner made with pillowy gnocchi, sun-dried tomatoes, fresh spinach, and Parmesan in a silky cream sauce. It’s the perfect cozy comfort food that’s easy enough for beginners and ready in just 15 minutes.

  • 1 tablespoon butter
  • 23 cloves garlic, minced
  • ¾ cup heavy cream
  • ⅔ cup chicken or vegetable broth
  • 1 pound potato gnocchi (shelf-stable, uncooked)
  • ⅓ cup sun-dried tomatoes (oil-packed, julienned)
  • ½ cup freshly grated Parmesan cheese
  • 1 teaspoon lemon juice
  • 12 cups baby spinach
  • Kosher salt and black pepper, to taste
  • Fresh basil, for garnish (optional)

Instructions

  1. Start the base: Melt the butter in a large skillet over medium heat. Add the garlic and sauté just until fragrant, about 30–60 seconds, making sure not to let it brown.
  2. Build the sauce: Stir in the heavy cream and broth. Let the mixture come to a gentle simmer while stirring occasionally to combine the flavors and build a smooth base for the gnocchi to cook in.
  3. Add gnocchi and tomatoes: Add the uncooked gnocchi and sun-dried tomatoes directly into the skillet. Stir gently to coat everything in the sauce. Cover the skillet with a lid and let cook for about 4 minutes.
  4. Finish cooking the gnocchi: Remove the lid and stir well. Test a piece of gnocchi to check for tenderness. If needed, cook uncovered for an additional 1–2 minutes, stirring gently to prevent sticking.
  5. Stir in final ingredients: Once the gnocchi are tender, add the spinach, Parmesan, and lemon juice. Stir until the spinach wilts and the cheese melts smoothly into the sauce. Season with salt and black pepper to taste, then remove from heat.
  6. Garnish and serve: Top with fresh basil and more Parmesan if desired. Serve warm and enjoy the creamy comfort.

Notes

  • Use the oil from the sun-dried tomato jar for extra flavor in place of or along with butter.
  • You can substitute kale or arugula for spinach.
  • To lighten the dish, use half-and-half instead of heavy cream, though the sauce may be thinner.
