Crispy Loaded Hasselback Potato Bites are a fun, bite-sized twist on classic potato skins. - 1 lb. small potatoes (about 2″ across) – red or Yukon gold potatoes work well
- Olive oil – for rubbing on the potatoes
- Kosher salt – for seasoning
- Sliced cheese (Colby Jack recommended) – cut into small squares
- Light sour cream – for topping
- Cooked bacon – chopped, for topping
- Sliced green onions – for topping
Instructions
- Preheat the oven to 400°F (200°C). Line a large baking sheet with aluminum foil.
- Using a sharp knife, make several cuts across each potato, being careful not to cut all the way through.
- Rub the potatoes with olive oil and sprinkle with kosher salt.
- Place the potatoes on the baking sheet and bake for 30 minutes, or until tender.
- After 30 minutes, carefully insert small squares of cheese between a few of the cuts on each potato.
- Return the potatoes to the oven and bake for an additional 5-10 minutes, until the cheese has melted and is bubbly.
- Let the potatoes cool for 10 minutes before topping with sour cream, crumbled bacon, and green onions.
- Serve warm or at room temperature and enjoy!
Notes
- If you prefer a crispier texture, you can bake the potatoes for a few extra minutes.
- Feel free to use your favorite cheese, such as cheddar, mozzarella, or pepper jack.
- If you don’t have small potatoes, you can cut larger potatoes into smaller chunks.
- These can be made ahead by prepping the potatoes and baking them the day of serving.
- If you want to make them healthier, you can use a reduced-fat cheese and omit the bacon or use turkey bacon.
