Ingredients
Scale
- 1 1/2 pounds boneless, skinless chicken breasts: provides lean, tender protein
- 2 tablespoons Cajun seasoning: delivers bold, spicy flavor
- 1 teaspoon paprika: adds depth and a smoky undertone
- 1/2 teaspoon garlic powder: enhances savory richness
- Salt and pepper, to taste: balances and boosts overall flavor
- 1 tablespoon olive oil: helps seasoning adhere and adds richness
- 1 red bell pepper, sliced: adds sweetness and vibrant color
- 1 green bell pepper, sliced: brings earthy flavor and crunch
- 1/2 yellow onion, sliced: provides aromatic sweetness
- 3 cups low-sodium chicken broth: forms the flavorful cooking base
- 8 ounces cream cheese, cubed: creates the creamy, tangy sauce
- 1 cup shredded Parmesan cheese: adds nuttiness and umami
- 12 ounces penne or rotini pasta: sturdy shapes that hold the sauce well
- Fresh parsley (optional): for a fresh, herbal garnish
- Extra Parmesan cheese (optional): for added cheesiness
- Crushed red pepper flakes (optional): adds extra heat to taste
Instructions
- Rub chicken breasts with Cajun seasoning, paprika, garlic powder, salt, and pepper. Marinate for 15–20 minutes if time allows.
- Place the seasoned chicken in a 6-quart crock pot. Add sliced red and green bell peppers, onion, and pour in the chicken broth.
- Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the chicken is fully cooked and tender.
- Remove the chicken from the crock pot, shred it using two forks, and return it to the pot.
- Add cubed cream cheese and shredded Parmesan to the pot. Stir until everything is melted and smooth. Let cook on low for 10–15 minutes more.
- Meanwhile, cook the pasta according to package instructions until just al dente. Drain and stir into the creamy chicken mixture.
- Serve hot, garnished with fresh parsley, extra Parmesan, or red pepper flakes as desired.
Notes
- Sear the chicken briefly before slow cooking to add extra depth of flavor.
- Use freshly grated Parmesan for better melt and texture.
- Cook pasta separately to avoid it becoming mushy in the crock pot.
- Adjust spice levels by using a milder Cajun seasoning or omitting red pepper flakes.
- Store leftovers in the fridge for up to 4 days; reheat with a splash of broth to loosen the sauce.
