Instructions

  1. Rub chicken breasts with Cajun seasoning, paprika, garlic powder, salt, and pepper. Marinate for 15–20 minutes if time allows.
  2. Place the seasoned chicken in a 6-quart crock pot. Add sliced red and green bell peppers, onion, and pour in the chicken broth.
  3. Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the chicken is fully cooked and tender.
  4. Remove the chicken from the crock pot, shred it using two forks, and return it to the pot.
