Description

Crockpot Cheese Tortellini and Sausage is a creamy, comforting dish made with savory Italian sausage, cheese-filled tortellini, and fresh spinach, all cooked together in a slow cooker. This easy-to-make recipe is perfect for busy nights, delivering rich flavors with minimal effort. Ideal for family meals, it’s a hit with both kids and adults.

Ingredients

Scale
  • 1 lb Italian sausage (mild or spicy)
  • 1 (19 oz) package frozen cheese tortellini
  • 4 cups fresh spinach, chopped
  • 1 (28 oz) can diced tomatoes (undrained)
  • 1 (8 oz) block cream cheese, cubed
  • 4 cups chicken broth (low-sodium recommended)
  • 1 teaspoon minced garlic
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the Italian sausage: In a skillet, heat the sausage over medium heat until browned and fully cooked. Drain excess fat and set aside.
  2. Prepare the crockpot: Add the cooked sausage, diced tomatoes (with juice), minced garlic, Italian seasoning, and chicken broth to the crockpot. Stir to combine.
  3. Add the cream cheese: Cube the cream cheese and scatter over the mixture in the crockpot. Cover and cook on low for 4-5 hours or high for 2-3 hours.
  4. Add the tortellini and spinach: About 30 minutes before the cooking time ends, add the frozen tortellini and fresh spinach to the crockpot. Stir gently to incorporate.
  5. Season to taste: Adjust the flavor with salt and pepper. Serve the creamy, cheesy mixture in bowls.

Notes

  • You can use turkey or chicken sausage for a leaner version.
  • If you prefer a spicier dish, choose spicy Italian sausage or add red pepper flakes.
  • Fresh tortellini can be used instead of frozen, but it cooks faster, so add it later in the cooking process.
  • This dish can be prepared ahead of time and stored in the fridge for up to 3 days, or frozen for up to 3 months.
  • For extra flavor, top with grated Parmesan cheese before serving.
