Description
Crockpot Chicken Fajitas for Effortless dinners is an easy slow cooker recipe featuring tender chicken, colorful bell peppers, onions, fajita seasoning, and fresh lime for a flavorful Tex-Mex meal with minimal prep and cleanup.
Ingredients
Scale
- 2 pounds boneless skinless chicken breasts or chicken thighs
- 3 bell peppers (red, yellow, and green), sliced
- 1 large onion, sliced
- 3 garlic cloves, minced
- 2 tablespoons fajita seasoning
- 1 cup salsa or diced tomatoes
- 1 tablespoon olive oil
- 1 tablespoon fresh lime juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons chopped fresh cilantro (optional)
- 8 small flour or corn tortillas
- 1 cup shredded cheese (optional for serving)
- 1/2 cup sour cream or Greek yogurt (optional for serving)
- 1 avocado or 1/2 cup guacamole (optional for serving)
- 1/2 cup pico de gallo or salsa (optional for serving)
Instructions
- Place the chicken breasts or thighs in the bottom of the crockpot.
- Add sliced bell peppers and onions over the chicken, then sprinkle garlic, fajita seasoning, salt, and black pepper evenly across the ingredients.
- Drizzle olive oil and pour salsa or diced tomatoes over the top. Add fresh lime juice.
- Cover and cook on low for 5 to 6 hours or on high for 3 to 4 hours until the chicken becomes tender and fully cooked.
- Remove the chicken and shred or slice it using two forks, then return it to the crockpot and mix with the juices and vegetables.
- Taste and adjust seasoning if needed. Add extra lime juice for brightness if desired.
- Warm tortillas before serving and fill with chicken fajita mixture.
- Top with cilantro, shredded cheese, sour cream, avocado, or salsa as desired and serve immediately.
Notes
- For firmer peppers, add them during the final 1 to 2 hours of cooking.
- Chicken thighs provide a juicier texture than chicken breasts.
- Avoid adding too much liquid since chicken releases moisture during cooking.
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
- Freeze cooled leftovers for up to 2 months for easy meal prep.
- Serve in tortillas, lettuce wraps, rice bowls, or over cauliflower rice for variation.
