  • 1/2 cup pico de gallo or salsa (optional for serving)

Instructions

  1. Place the chicken breasts or thighs in the bottom of the crockpot.
  2. Add sliced bell peppers and onions over the chicken, then sprinkle garlic, fajita seasoning, salt, and black pepper evenly across the ingredients.
  3. Drizzle olive oil and pour salsa or diced tomatoes over the top. Add fresh lime juice.
  4. Cover and cook on low for 5 to 6 hours or on high for 3 to 4 hours until the chicken becomes tender and fully cooked.
  5. Remove the chicken and shred or slice it using two forks, then return it to the crockpot and mix with the juices and vegetables.
  6. Taste and adjust seasoning if needed. Add extra lime juice for brightness if desired.
