Description

Crockpot Garlic Parmesan Chicken and Potatoes is a simple and hearty dish that combines tender chicken with creamy, garlicky potatoes, all cooked together in the slow cooker. Perfect for busy families, this meal is both easy to make and delicious. The rich garlic parmesan sauce infuses both the chicken and potatoes, creating a flavorful and satisfying dinner.

Ingredients

Scale
  • 1 lb chicken breasts
  • 5 medium-sized potatoes
  • 2 tbsp olive oil
  • Salt, to taste
  • Pepper, to taste
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 2 tbsp minced garlic
  • Buffalo Wild Wings Garlic Parmesan Sauce (just enough to cover chicken)
  • 1 cup shredded mozzarella cheese

Instructions

  1. Wash and scrub the potatoes, then chop them into small cubes, ensuring uniform size for even cooking.
  2. Spray the crockpot with cooking spray. Add the chopped potatoes to the crockpot.
  3. Drizzle the potatoes with olive oil and season with salt, pepper, garlic powder, and smoked paprika. Add the minced garlic and stir well.
  4. Cube the chicken breasts and season with salt, pepper, paprika, onion powder, and Italian seasoning.
  5. Place the seasoned chicken on top of the potatoes in the crockpot.
  6. Pour enough garlic parmesan sauce over the chicken to cover it. You can add more sauce after cooking if needed.
  7. Cook on low for about 6 hours, or until the chicken reaches 165°F and the potatoes are tender.
  8. Stir everything together and top with shredded mozzarella cheese. Let it sit for 10-15 minutes to melt the cheese.
  9. Serve and enjoy! You can add extra ranch or a side of veggies if desired.

Notes

  • Ensure the potatoes are uniform in size for even cooking.
  • If you prefer darker meat, chicken thighs can be used instead of chicken breasts.
  • You can substitute mozzarella with Parmesan cheese for a sharper flavor.
  • To make it spicier, add chili flakes or hot sauce to the garlic parmesan sauce.
  • For quicker preparation, you can prep the ingredients the night before and refrigerate them until ready to cook.
