Description

  • 1 1/2 cups powdered sugar (for filling)
  • 2 tablespoons heavy cream
  • 1 teaspoon vanilla extract

Instructions

  1. Sift almond flour and powdered sugar together into a bowl to remove lumps and ensure a smooth batter.
  2. In a separate bowl, beat egg whites until foamy, then add cream of tartar and gradually add granulated sugar while whipping to stiff peaks.
  3. Gently fold the dry ingredients into the meringue until the batter flows like lava and forms ribbons.
  4. Divide the batter and add gel food coloring to create pastel shades.
  5. Transfer batter into piping bags and pipe oval shapes onto a parchment-lined baking sheet.
  6. Tap the baking sheet to release air bubbles and pop any visible bubbles with a toothpick.
  7. Let the shells rest for 30–60 minutes until a dry skin forms.
  8. Preheat oven to 300°F (150°C) and bake for 12–15 minutes, rotating halfway through.
  9. Allow shells to cool completely before removing from parchment.
  10. Prepare filling by beating butter, powdered sugar, cream, and vanilla until smooth.
  11. Pipe filling onto one shell and sandwich with another.
  12. Decorate with speckles or patterns to resemble Easter eggs.
