Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
- Peel and dice the fresh peaches. Toss them with 1 tablespoon flour to prevent sinking.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, whisk the eggs until light and frothy. Add buttermilk, oil, and almond or vanilla extract, whisking until smooth.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined.
- Fold in the prepared peaches carefully, avoiding overmixing.
- Transfer the batter to the prepared loaf pan and smooth the top.
- Bake for 45 to 50 minutes, or until a toothpick inserted into the center comes out clean or with a few dry crumbs.
- Cool the bread in the pan for 10 minutes, then transfer to a wire rack.
- For white chocolate ganache, heat the heavy cream until warm, pour over candy melts, and whisk until smooth. Drizzle over warm bread.
- For peach glaze, whisk peach puree, powdered sugar, and extract together. Add milk as needed for desired consistency, then drizzle over slightly cooled bread.

- Do not overmix the batter or the bread may become dense and tough.
- Frozen peaches can be used; thaw and drain well before adding.
- Canned peaches may be substituted if thoroughly drained and patted dry.
