Description

- 2 cups fresh strawberries, pureed and divided
- 2 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt

- 1 3/4 cups granulated sugar
- 3 large eggs
- 3/4 cup whole milk
- 2 teaspoons vanilla extract
- 1 cup unsalted butter, softened (for frosting)
- 4 cups powdered sugar
- 1/3 cup strawberry puree (for frosting)
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13-inch sheet cake pan.
- Wash, hull, and puree the strawberries. Reserve 1 1/3 cups for the cake and 1/3 cup for the frosting.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, beat 1 cup butter and granulated sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition. Mix in vanilla extract and 1 1/3 cups strawberry puree.
- Add the flour mixture alternately with milk, beginning and ending with the flour mixture. Mix until just combined.
- Pour batter into the prepared pan and spread evenly.
- Bake for 28–32 minutes, or until a toothpick inserted in the center comes out clean.
- Cool the cake completely in the pan.
- For the frosting, beat 1 cup softened butter until creamy. Gradually add powdered sugar.
- Mix in 1/3 cup strawberry puree and beat until light and fluffy.
- Spread frosting evenly over the cooled cake. Slice and serve.
Notes
- Use ripe strawberries for the best flavor and color.
- If using frozen strawberries, thaw and drain well before pureeing.
- Do not overmix the batter once the flour is added.
- For a stronger strawberry flavor, reduce the puree slightly on the stovetop before using.
- Store covered in the refrigerator for up to 4 days.
- Bring to room temperature for 15–20 minutes before serving for the best texture.
