Description

  • 2 cups fresh strawberries, pureed and divided
  • 2 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened (for cake)
  • 1 3/4 cups granulated sugar
  • 3 large eggs
  • 3/4 cup whole milk
  • 2 teaspoons vanilla extract
  • 1 cup unsalted butter, softened (for frosting)
  • 4 cups powdered sugar
  • 1/3 cup strawberry puree (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch sheet cake pan.
  2. Wash, hull, and puree the strawberries. Reserve 1 1/3 cups for the cake and 1/3 cup for the frosting.
  3. In a medium bowl, whisk together the flour, baking powder, and salt.
  4. In a large bowl, beat 1 cup butter and granulated sugar until light and fluffy.
  5. Add eggs one at a time, beating well after each addition. Mix in vanilla extract and 1 1/3 cups strawberry puree.
  6. Add the flour mixture alternately with milk, beginning and ending with the flour mixture. Mix until just combined.
  7. Pour batter into the prepared pan and spread evenly.
  8. Bake for 28–32 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool the cake completely in the pan.
  10. For the frosting, beat 1 cup softened butter until creamy. Gradually add powdered sugar.
  11. Mix in 1/3 cup strawberry puree and beat until light and fluffy.
  12. Spread frosting evenly over the cooled cake. Slice and serve.

Notes

  • Use ripe strawberries for the best flavor and color.
  • If using frozen strawberries, thaw and drain well before pureeing.
  • Do not overmix the batter once the flour is added.
  • For a stronger strawberry flavor, reduce the puree slightly on the stovetop before using.
  • Store covered in the refrigerator for up to 4 days.
  • Bring to room temperature for 15–20 minutes before serving for the best texture.
