Instructions

  1. Drain the canned corn thoroughly and place it into a large mixing bowl.
  2. Add diced green bell pepper and finely chopped red onion to the bowl with the corn.
  3. Stir in shredded cheddar cheese until evenly distributed.
  4. In a separate bowl, mix mayonnaise, sour cream, lime juice, salt, pepper, and chili powder until smooth and creamy.
  5. Pour the dressing over the corn mixture and stir until everything is well coated.
  6. Cover and refrigerate for about 20–30 minutes to allow flavors to blend (optional).
  7. Just before serving, gently fold in the Fritos corn chips to maintain crunch.
