  • 1 medium banana, sliced
  • 1 cup semisweet chocolate chips, melted and cooled slightly
  • 1 tablespoon baking cocoa
  • 1 cup chunky peanut butter

Instructions

  1. Line a 9×5-inch loaf pan with plastic wrap, ensuring the edges extend up all sides. Sprinkle a third of the crushed Nutter Butter cookies into the pan.
  2. In a large bowl, mix mascarpone cheese, sugar, and vanilla extract. Fold in the whipped topping until smooth.
  3. Divide the mascarpone mixture into three portions. To one portion, fold in the sliced banana. Spread this mixture evenly over the cookie layer in the loaf pan.
  4. For the second portion, stir in the melted chocolate and cocoa. Spread this mixture on top of the banana layer, then sprinkle with another third of the crushed cookies.
  5. To the third portion, fold in the chunky peanut butter. Spread this mixture over the chocolate layer.
  6. Cover and freeze for at least 5 hours or until firm.
  7. To serve, invert the terrine onto a platter, remove the plastic wrap, and slice into thick pieces.
