Description

This Fruit Salad – with honey lime dressing (EASY) is a fresh, vibrant dish that takes minutes to prepare. A mix of juicy strawberries, sweet peaches, tart kiwis, and antioxidant-rich blueberries, all drizzled with a light, zesty honey-lime dressing. It’s the perfect refreshing side dish, snack, or light dessert for any occasion.


Ingredients

  • 12 oz strawberries, hulled and sliced
  • 3 peaches, diced
  • 1 ½ cups blueberries
  • 23 kiwis, peeled and sliced
  • 3 tbsp honey
  • 2 tbsp freshly squeezed lime juice

Instructions

  1. Wash and prep the fruits: Rinse all fruits thoroughly under cold water. Pat them dry with a clean towel to remove excess moisture before cutting.
  2. Cut the fruits: Hull the strawberries and slice them into halves or quarters. Dice the peaches into bite-sized pieces, leaving the skin on for extra texture and nutrients. Peel the kiwis and cut them into thin rounds or chunks. Keep the blueberries whole.
  3. Make the dressing: In a small bowl, whisk together the honey and freshly squeezed lime juice until well combined. The mixture should be slightly liquid and smooth.
  4. Combine and toss: Place all the prepared fruits in a large mixing bowl. Drizzle the honey lime dressing over the top and gently toss everything together using a spatula or your hands. Be careful not to crush the softer fruits while mixing.
