Description

These Fudgy Cosmic Brownie Cookies combine the chewy texture of a brownie with the convenience of a cookie, topped with a rich chocolate ganache and colorful sprinkles. They are easy to make and perfect for any chocolate lover looking for a nostalgic and fun treat.

Ingredients

Scale
  • ½ cup unsalted butter, softened
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ¾ cup all-purpose flour
  • ¼ cup cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup chocolate chips or chopped chocolate
  • ½ cup heavy cream (for ganache)
  • ½ cup chopped chocolate (for ganache)
  • ¼ cup rainbow sprinkles

Instructions

  1. Preheat the oven: Set the oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking.
  2. Cream the butter and sugars: In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy, about 2 minutes.
  3. Incorporate the wet ingredients: Add the egg and vanilla extract, mixing well until fully combined. This helps bind the dough and enhances flavor.
  4. Combine the dry ingredients: Sift the flour, cocoa powder, baking soda, and salt into the wet mixture. Stir gently until just combined, being careful not to overmix.
  5. Fold in the chocolate: Stir in the chocolate chips or chopped chocolate to distribute evenly throughout the dough for a rich chocolate flavor.
  6. Portion the cookies: Use a cookie scoop or spoon to drop dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake the cookies: Place the cookies in the oven and bake for 8-10 minutes, or until the edges are set but the centers appear slightly underbaked. Let them cool on the baking sheet for 5 minutes before transferring to a wire rack.
  8. Make the ganache: Heat the heavy cream until warm but not boiling. Pour it over the chopped chocolate and let sit for 1 minute before stirring until smooth.
  9. Assemble the cookies: Once the cookies are completely cool, spread a layer of ganache on each one. Immediately top with rainbow sprinkles before the ganache sets.
  10. Allow to set: Let the cookies sit for about 15 minutes until the ganache firms up slightly before serving.

Notes

  • If you prefer a firmer cookie, refrigerate the dough for 30 minutes before baking.
  • For extra flavor, add a teaspoon of espresso powder to enhance the chocolate taste.
  • To make the cookies extra chewy, use dark brown sugar instead of light brown sugar.
  • These cookies freeze well. Store in an airtight container and thaw at room temperature before serving.
