Funfetti Cinnamon Rolls are soft, fluffy homemade cinnamon rolls filled with brown sugar, cinnamon, and colorful rainbow sprinkles. Topped with creamy vanilla or cream cheese frosting, these festive rolls are perfect for birthdays, brunch, or weekend breakfasts.

- 3 1/2 cups all-purpose flour
- 2 1/4 teaspoons active dry yeast
- 3/4 cup warm milk
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, melted
- 1 large egg
- 1/2 teaspoon salt
- 1/2 cup brown sugar
- 1 1/2 tablespoons ground cinnamon
- 1/4 cup unsalted butter, softened (for filling)
- 1/3 cup rainbow sprinkles
- 1 teaspoon vanilla extract
- 4 ounces cream cheese, softened
- 1 cup powdered sugar
- 2 tablespoons milk or heavy cream
Instructions
- Warm the milk until slightly warm and mix with yeast and a teaspoon of sugar. Let it sit for 5–10 minutes until foamy.
- In a large bowl combine flour, remaining sugar, and salt. Add the yeast mixture, melted butter, egg, and vanilla extract.
- Mix until a soft dough forms. Knead the dough for about 8–10 minutes until smooth and elastic.
- Place the dough in a lightly greased bowl, cover, and let it rise in a warm place for about 1 hour or until doubled in size.
- Roll the dough into a large rectangle on a floured surface.
- Spread softened butter evenly over the dough.
- Mix brown sugar and cinnamon together and sprinkle over the buttered dough.
- Evenly scatter rainbow sprinkles across the surface.
- Roll the dough tightly into a log starting from the long edge.
- Cut the log into 9–12 equal slices and place them in a greased baking dish.
- Cover and let the rolls rise again for 30 minutes.
- Bake in a preheated oven at 350°F (175°C) for 20–25 minutes until golden brown.
- Prepare frosting by mixing cream cheese, powdered sugar, vanilla, and milk until smooth.
- Spread the frosting over warm rolls and add extra sprinkles if desired.
Notes
- Make sure the milk is warm but not hot to properly activate the yeast.
- Use rainbow jimmies instead of nonpareils to prevent color bleeding.
- Do not overbake the rolls to keep them soft and fluffy.
- The dough can be prepared the night before and refrigerated for overnight rising.
- Store leftover rolls in an airtight container for up to 3 days.
