Ingredients
Scale
- 1.5 lbs sirloin steak, cut into bite-sized pieces
- 1.5 lbs baby gold or red potatoes, cut into small chunks
- 3 tbsp unsalted butter
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp smoked paprika
- 1 tsp garlic powder
- ½ tsp crushed red pepper flakes (optional)
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Prepare the potatoes: Heat olive oil in a large skillet over medium-high heat. Add the potatoes in a single layer and season with salt, black pepper, and smoked paprika. Cook, stirring occasionally, until crispy and fork-tender, about 10-12 minutes. Transfer the potatoes to a plate and set aside.
- Cook the steak: While the potatoes cook, pat the steak pieces dry with a paper towel and season with garlic powder, salt, and black pepper. In the same skillet, add a little more olive oil if needed, then add the steak in a single layer. Sear for about 2 minutes per side until browned on the outside while keeping the inside tender. Remove from the pan and set aside.
- Make the garlic butter sauce: Reduce the heat to medium and add the butter to the skillet. Once melted, stir in the minced garlic and red pepper flakes (if using). Cook for 30 seconds until fragrant, being careful not to burn the garlic.
- Combine and finish: Return the cooked potatoes and steak to the skillet, tossing them in the garlic butter sauce. Stir well to coat everything evenly and let it cook for another minute. Remove from heat, garnish with fresh parsley, and serve immediately.
Notes
- For an extra crispy crust on the steak, make sure the pan is very hot before adding the meat.
- If using a tougher cut of steak, marinate it for 30 minutes before cooking for better tenderness.
- Add a squeeze of fresh lemon juice at the end for a burst of brightness.
