  • 1 tsp baking soda

  • 1 tbsp lemon zest
  • 1/2 cup honey
  • 1/4 cup molasses
  • 1 egg
  • 1/2 cup brown sugar
  • 1/4 cup almond meal
  • 1/4 cup candied orange peel, finely chopped
  • Powdered sugar for glazing

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, mix the flour, baking soda, cinnamon, cloves, nutmeg, allspice, and lemon zest.
  3. In another bowl, whisk together honey, molasses, egg, and brown sugar. Stir in almond meal and candied orange peel.
  4. Gradually combine the dry ingredients with the wet ingredients to form a dough. The dough will be slightly sticky.
  5. Cover the dough with plastic wrap and refrigerate for at least 30 minutes to firm up.
  6. Roll out the dough on a floured surface to about 1/4-inch thickness and cut into desired shapes using cookie cutters.
  7. Place cookies on the baking sheet, leaving space between each. Bake for 10-12 minutes or until edges are golden brown.
  8. Allow cookies to cool completely on a wire rack.
  9. If desired, glaze with powdered sugar and let set before storing.
