Description

This Gingerbread French Toast is a cozy, spiced breakfast perfect for the holiday season. Made with buttery brioche soaked in a rich molasses and spice-infused batter, it’s golden on the outside, soft on the inside, and topped with maple syrup and festive garnishes. It’s quick, easy, and full of warm holiday flavor.

Ingredients

Scale
  • 1 loaf brioche bread: soft and buttery base
  • 4 large eggs: adds richness and structure
  • 1 cup milk: helps thin the batter and adds creaminess
  • 2 tbsp real maple syrup: adds natural sweetness
  • 2 tbsp molasses: gives the toast its classic gingerbread flavor
  • 1 tsp ground ginger: provides the signature spice
  • 1/2 tsp cinnamon: adds warmth and depth
  • 1/8 tsp nutmeg: subtle spice for balance
  • 1/8 tsp ground cloves: aromatic and festive
  • 1 tsp vanilla extract: smooths and enhances flavor
  • Pinch of salt: balances and enhances flavor
  • Butter and maple syrup: for serving
  • Powdered sugar, fresh rosemary, cranberries: optional garnishes

Instructions

  1. In a large shallow bowl, whisk together eggs, milk, molasses, maple syrup, vanilla, ginger, cinnamon, nutmeg, cloves, and a pinch of salt.
  2. Preheat your griddle or nonstick skillet to 275°F or medium heat and lightly grease with nonstick spray or butter.
  3. Dip each slice of brioche into the batter for 10–15 seconds per side, ensuring it’s well coated.
  4. Place the soaked bread onto the hot griddle and cook for 2–3 minutes per side or until golden brown.
  5. Transfer cooked slices to a warm oven if needed while finishing the rest.
  6. Serve warm with butter, maple syrup, powdered sugar, and optional rosemary and cranberries for garnish.

Notes

  • Use slightly stale brioche for best absorption and texture.
  • Don’t oversoak the bread—too long and it may fall apart.
  • This recipe freezes well—layer cooled slices with parchment and freeze in an airtight container.
  • Reheat in a toaster or 375°F oven to retain crispiness.
  • Try challah or Texas toast as alternatives to brioche.
